141 million Valentines’ Day cards are exchanged annually, making Valentine’s Day the second-most popular greeting-card-giving occasion. This excludes packaged kids valentines for classroom exchanges.

Chinese Casserole
1 can cream of mushroom soup
¼ cup water
¾ cup chop suey noodles
1/8 to ¼ lb. cashews (optional)
1 cup diced chicken, cooked
1 cup chicken broth
¼ cup chopped onion
Mix ingredients and pour into greased casserole. Garnish with remaining noodles. Bake in covered dish at 320 degrees for 30 minutes. Uncover and bake for 10 more minutes.

In 1949 General Foods unveils its World War II staple to civilians under the name Minute Rice. A war-weary nation is too grateful to point out that it actually takes five minutes to cook.

Really Red Valentine’s Day Cake
2 ounces red food coloring
2½ cups flour, sifted
3 T. Nestle’s milk cocoa
1 tsp. salt
½ cup shortening or oleo
1 cup buttermilk
1½ cups sugar
1 T. vinegar
2 eggs
1 tsp. baking soda
2 tsp. vanilla
Mix cocoa and food coloring and set aside. Cream shortening and sugar and beat eggs into the mixture one at a time. Add cocoa mixture and vanilla. Mix salt and flour together. Alternate adding dry ingredients and buttermilk.
Beat the mixture hard. While beating, stir in a mixture of vinegar and baking soda. Pour mixture into greased layer pans and bake at a little less then 350 degrees for 30 minutes.
Makes 2 or 3 layers.
Can frost with white frosting and decorate with coconut or red candies.
